Blueberry BBQ sauce is smoky, tangy, sweet, and can be made with fresh or frozen blueberries. You'll love the deep, rich color and balance of flavors. Use it as a finishing sauce, dip, or marinade. Vegan, GF, refined sugar-free.Yield: makes 2 ½ cups
2cupsblueberries, fresh or frozen - if using frozen, thaw first
1cuptomato sauce - cooked, pureed tomatoes + salt; usually sold in 8 oz. cans
½cupwater
⅓cupmaple syrup - reduce to ¼ cup if you prefer a less sweet sauce
2Tablespoonsapple cider vinegar
2Tablespoonsbalsamic vinegar
1teaspoonfine sea salt
black pepper
Instructions
Preheat a saute pan over medium heat and add the oil, if using. Saute the onion for 5 minutes, stirring occasionally. Add the garlic and chipotle flakes, and cook for 1 minute. (If using canned chipotle in adobo, add in step 2.)
Add the blueberries and all remaining ingredients Stir and bring to a simmer. Adjust heat to maintain a simmer, and cook for 15 minutes or until thickened and slightly reduced.
Remove from heat and let cool 15 minutes. Transfer to a blender, and blend until smooth. Pour into a jar, and let cool. Cover and refrigerate until ready to use.
Notes
Store blueberry BBQ sauce in an airtight container in the refrigerator for up to 1 week. Freezer friendly.
