Fonio porridge is creamy, satisfying, and ready in minutes! Fonio's neutral flavor and quick cook time make it perfect for breakfast. It's gluten-free, meal prep-friendly, and endlessly versatile.
1½cupsplain soy milk, divided - or your favorite non-dairy milk
½cupfonio - dry, uncooked
½teaspoongaram masala spice blend - or cinnamon or pumpkin spice
½teaspoonvanilla extract
¼teaspoonsea salt
¼cupgolden raisins - or chopped dates or other dried fruit
1tablespoonmaple syrup, optional - or your favorite sweetener, to taste
1scoopplant-based vanilla protein powder, optional - add more if you like
2tablespoonshemp seeds - or ¼ cup chopped walnuts
Instructions
In a small saucepan, bring the water and 1 cup of soy milk to a boil over medium heat. Stir in the fonio, garam masala (or other spice), vanilla, and salt. Return to a simmer, reduce heat to low, cover, and cook for 2 minutes or until the fonio has absorbed most of the liquid.
Stir in the raisins and maple syrup, if using. If the porridge is too thick, add a bit more milk. Remove from heat, cover again, and let stand 3 minutes.
Before serving, stir in the remaining ⅓ to ½ cup milk and the protein powder, if using. Serve warm, topped with hemp seeds or other seeds/chopped nuts, and extra raisins, protein powder, or sweetener, as desired.
Notes
Store leftover porridge in an airtight container in the refrigerator for up to 5 days. Reheat on the stove or in the microwave with additional milk for consistency. Nutrition info represents the basic fonio porridge made with soy milk, not including protein powder, fruit, or toppings.
